Why Is a Sharp Knife Safer Than a Blunt One?

A sharp edge concentrates your push into a tiny area, so it cuts instead of slipping.

    The same push spread over a wide edge barely dents anything. Squeezed into a narrow line it becomes enormous pressure.

    Instead of parting the food it squashes it, so you lean on it. All that stored force is waiting to go somewhere.

    When the blade skids off the skin your whole push arrives somewhere unplanned — usually your other hand. That is the accident.

    Most dullness is an edge folded over rather than worn away. A steel pushes it back into line, which is why it works in seconds.

    Cutting on glass or stone folds an edge over almost instantly, which is what chopping boards are really protecting.
