Why Is a Sharp Knife Safer Than a Blunt One?

The same push spread over a wide edge barely dents anything. Squeezed into a narrow line it becomes enormous pressure.

A well-sharpened blade ends in an edge a few hundred atoms across. Almost any force applied there is enough to break food apart.

Instead of parting the food it squashes it, so you lean on it. All that stored force is waiting to go somewhere.

Cutting on glass or stone folds an edge over almost instantly, which is what chopping boards are really protecting.
