Why Does Frying Taste Different From Boiling?
Water stops at 100 degrees. Oil sails on to 180, and that is where the flavour is made.

Oil has no boiling ceiling in the pan.
Water turns to steam at 100 degrees and can go no higher. Oil stays liquid far past that, so a pan of it can hold 180 degrees steadily.

Browning needs about 140 degrees.
The reactions that make brown crusts and roasted smells only start above roughly 140 degrees. Boiling food never reaches the starting line.

The surface has to dry out first.
Wet food spends the first minute boiling off its own surface water at 100 degrees. Only once that is gone can the surface climb and brown.

Which is why wet food never crisps.
Crowding a pan or adding damp food drops the oil below the browning point, and everything sits in its own steam going grey.

Oil also carries heat into every crevice.
Liquid touches the whole surface at once, unlike air in an oven. That is why frying is fast, and why the oil temperature matters so much.
Deep-fried food is not oily if the oil is hot enough — escaping steam keeps the oil out until the crust has set.
The short version
Oil reaches temperatures water cannot, so frying browns and crisps food while boiling can only soften it.
