Why Does Toast Go Brown?
Browning is a chemical reaction between sugars and proteins, not just drying out.

Drying comes first.
The surface must lose its water before it can get above 100°C. Wet bread just steams, which is why damp bread never browns properly.

Then sugars and proteins combine.
Above about 140°C the sugars and amino acids in the bread react together, building hundreds of new compounds that did not exist before.

Those compounds carry the smell and colour.
Brown pigments and aromatic molecules are made in the same reaction. That is why the smell and the colour always arrive together.

The same reaction is everywhere in cooking.
Seared steak, roast coffee, browned onions and baked pastry all rely on it. It is the reason cooked food tastes different from raw.

Too far and it burns instead.
Past a point the compounds break down into carbon. Burning is a different, later change — it destroys flavour rather than building it.
Toast is only crisp while the inside stays dry. Left out, it absorbs moisture from the air and goes leathery.
The short version
Toast browns when heat makes sugars and proteins react into new coloured, aromatic compounds — the same reaction as searing and roasting.
Try it yourself
Toast one dry slice and one you have lightly dampened. The damp one steams and stays pale for far longer.
