Held around 80 degrees for hours, the ropes slowly unravel into loose strands and dissolve into the water as gelatine.

Aromatic molecules, salts and browning compounds all dissolve gradually. Hours are needed because everything here is a slow process.
Roasting the bones first adds browning flavours the boiling water could never make on its own.
