Honey Found in a Tomb Is Still Honey

Archaeologists have opened sealed jars from Egyptian tombs and found honey that had not gone off. It is not luck — honey defends itself three separate ways at once.

    Egyptian burials often included food for the afterlife. Bread turned to dust and meat to leather, but sealed honey jars have come out thick, sweet and — as far as anyone can tell — unspoiled. No cold store, no chemicals, no air conditioning. Just a lid.

    A microbe landing in honey does not starve. It dries out.

    Bacteria and moulds need liquid water. Honey is around 17 per cent water, but nearly all of it is bound tight to sugar molecules and unavailable. Worse for a microbe, honey is so concentrated that it pulls water back out of any cell that lands in it.

    This is the same trick as salting meat or candying fruit. Honey just arrives that way, without anyone doing anything to it.

    Defence two: it is more acidic than you would guess.

    Lower is more acidic. Most spoilage bacteria give up well above honey.

    Honey sits around pH 3.9 — roughly as acidic as orange juice, and far too sour for most of the bacteria that spoil food. Sweetness hides it completely. Your tongue reads sugar and never notices the acid underneath.

    The defence switches itself on precisely when the first defence weakens.

    A bee mixes an enzyme called glucose oxidase into the nectar. Wherever honey picks up a little moisture, that enzyme starts turning glucose into gluconic acid and hydrogen peroxide. It is the same antiseptic sold in brown bottles, released slowly and only where it is needed.

    This is also why honey has been used on wounds for thousands of years, and why medical-grade honey dressings are still sold today.

    Every defence depends on the jar staying sealed. Honey pulls water out of damp air greedily, and once it is dilute enough it will ferment like anything else. And honey can carry dormant botulism spores — harmless to adults, genuinely dangerous to an infant under one, whose gut cannot yet fight them off.

Honey does not spoil because it holds almost no free water, sits at about pH 3.9, and carries a bee enzyme that releases hydrogen peroxide the moment moisture appears.

Try it yourself

Leave a spoonful of honey uncovered in a humid kitchen for a week and compare it with a sealed jar. The open one goes runnier — it is pulling water out of the air, and losing its main defence.
