How Does a Boat Sail Into the Wind?
The sail's push is mostly sideways, the keel blocks sideways, and what is left is forward.

A sail is a wing standing on end.
A filled sail takes the same curved shape as an aircraft wing, and it turns the passing wind for exactly the same reason.

The wind's push is mostly sideways.
Because the sail is set at an angle, the force it generates points largely across the boat rather than along it, which alone would tip you over.

The keel refuses to go sideways.
A deep fin under the hull slices forward through water easily but has to shove a huge amount of it aside to move sideways, so it barely does.

What is left over is forward motion.
With the sideways part of the push absorbed by the keel, the only component the boat can still respond to is the one pointing ahead.

You still cannot sail straight at the wind.
Point directly into it and the sail cannot fill or hold a curve, so it flaps uselessly. Sailing upwind means a zigzag, never a straight line.
A racing yacht can sail about 40 degrees off the true wind, so reaching a point directly upwind means covering roughly 30% more distance.
