Why Does Pickling Stop Food Rotting?
Microbes need water and a comfortable acidity. A pickle jar takes away both.

Spoiling is microbes eating first.
Food does not rot on its own. Bacteria, yeasts and moulds land on it, feed, and leave the by-products we recognise as spoiled.

Most of them cannot cope with acid.
Vinegar drops the acidity far below what spoilage bacteria can survive. Their proteins stop working and they cannot multiply.

Salt takes the water away.
Salty brine pulls water out of microbes by osmosis. Even a survivor of the acid finds nothing liquid left to live in.

Sometimes helpful microbes do the acidifying.
In a salt-only ferment, lactic bacteria tolerate the brine, eat the sugars and produce the acid themselves. That is sauerkraut and kimchi.

A sealed jar keeps the conditions.
Boiling seals the lid and drives out air, so new microbes cannot arrive and the acid stays at strength for years.
An unsealed jar in the fridge is still fine for weeks — the acid is doing the work, the seal only keeps new arrivals out.

Pickling preserves by making food too acidic and too salty for spoilage microbes, then sealing out new ones.
Try it yourself
Leave one cucumber slice in vinegar and one in plain water on the windowsill. After three days only one is still recognisable.
