How Does a Bitter Bean Become Chocolate?
A raw cocoa bean tastes horrible. Chocolate exists because someone let the beans rot first.

The raw bean is inedible.
Straight from the pod a cocoa bean is bitter, astringent and tastes of nothing you would recognise. There is no chocolate flavour in it at all yet.

Fermenting builds the flavour.
The beans are piled up in their sweet white pulp and left for about a week. Yeasts and bacteria eat the pulp, the pile heats up, and the chemistry inside the bean changes completely.

Roasting finishes it.
Heat makes sugars and proteins react into hundreds of new aromatic compounds. This is the same reaction that browns bread and meat, and it is where most of the smell comes from.

Grinding turns it into liquid.
A cocoa bean is closer to a block of butter than to a coffee bean. The bean is over half fat, so grinding it does not make a powder — it makes a thick liquid. Everything else in a chocolate bar is added to that.

The smoothness is hours of stirring.
The gritty ground mass is stirred warm for many hours, which rounds every particle down below what a tongue can feel. That step is why modern chocolate is smooth and older chocolate was not.
Cocoa butter is the reason chocolate snaps and then melts in the mouth: it is solid at room temperature and liquid at body temperature, with very little in between.
